Kombucha


If you know me at all, you know I have an affinity  for fermentation and an appetite for ancient food. Though popularized in 19th century Russia Kombucha, a fermented tea touted to be an elixir of health and healing, has been around for over 2000 years. To me it tastes like sparkling cider but not everyone is fond of the taste.

To make Kombucha you will need a scoby. Scoby is an acronym for symbiotic colony of bacteria and yeast. It is a light colored disk often mistakenly referred to as a mushroom. When placed a jar of sweetened tea the scoby converts the simple sugar, tannins and caffeine into a probiotic, vitamin packed wonder drink.

To make Kombucha dissolve 1 cup of sugar 3 quarts of boiling water. Remove from heat and add 5 bags of black tea (or 3 green and 2 black). Steep for 15 min., cool to room temperature, add the scoby, ferment at room temperature for a week.

I love mine. Interesting that no auto link from Amazon came up for a Scoby! If you don't have a friend to share one with you (smile), is there a link to a site you'd recommend?

What great timing!

I'm trying to find probiotic foods for my husband...He caught clostridium difficle from a hospital in Wyoming. Came home to Texas, went to the ER & was hospitalized. Took 3 days for a diagnosis. Dr. prescribed Flagyl, but at the wrong dose & for too short a period...he relapsed, & by the 3rd relapse he lost 90lbs in 94 days & the Cdiff had become resistent to the Flagyl.....had to go on vancomayacin (sp?) at $1000 a bottle! Took almost 6 months but he finally got over it.

Very scary and I heard from a nurse friend that they've had lots of cdiff the past 3 weeks...

So basically I'm paranoid and want to find a probiotic he'll take... I buy some from the health food store & try to get him to eat yogurt but he's not a dairy fan....hence the search for alternatives.

Sorry that was long winded...

Anywho....hubby likes ice tea....a lot actually as long as it isn't syrupy sweet. He likes apple cider too...So where do I find a Scoby? :-)

@Suzy I have heard some people found their scoby on craigslist, other than that you google is as good as mine :)

@Crystal Wow, I am so sorry your husband went through all that!!! If you message me on HT I'll send you a scoby for the price of a small flat rate shipping box, $5.20

Christy it was truly a nightmare.....it got so bad they were talking about surgery & putting him on a colonscopy bag just to get rid of it.... I'm so thankful it didn't go that far!

That is a very generous offer, thank you so much! I will shoot ya a PM. Will it be okay to ship in the heat? Can it "die"? My mom is a keifer fan & she's obsessive about her grains & is always telling my brothers not to "kill" them....lol

I tried getting hubby to drink keifer, but he can't stand it (neither can I, but I hide it in smoothies)

You make me curious about Kombucha. It is on my list for years to try! However this has to stay on the list as I stepped back in time today(however not as far as the Kombucha times ;-) and this experience will occupy myself and the blog for quite some time. Have a wonderful start into the week
